They must be aware of their surroundings and potential threats in order to survive. Dogs are most vulnerable when they are pooping because they are unable to respond to danger by running away or fighting it.
They are acutely aware of their vulnerability, so they scan the pack for any warning signs or signals of impending danger. Since there’s no pack, they look to their humans to signal them of any impending danger.
Also, your dog may be staring at you while doing his business since you may have conditioned him to do it in a certain location by rewarding him for it. But the main reason is for you to protect them and watch their backs while they take a dump.
